Most butchers in Ireland prepare Corned beef(salted not the tinned variety) so the saltpeter is not needed.
Ideal for when you get home from the pub on Christmas eve night!

Down here we corn the beef first and then spice it. It is lovely with a salad or with pickled red cabbage and potatoes. Try it you won't be dissapointed!:)

Mine's spicing away in the fridge at the moment, first time so fingers crossed.

I had some this morning and it was fantastic! Nicer than smoked salmon. When you have it cooked, leave it in the water for a few hours so it wont be as dry as a board.

Yes the whole year round to order but at christmas we make tons of the stuff!

Had some of mine today, very tasty with apricot chutney and Mrs DBs homemade bread. Good idea to leave it in the water after cooking.
