Most butchers in Ireland prepare Corned beef(salted not the tinned variety) so the saltpeter is not needed.
Ideal for when you get home from the pub on Christmas eve night!
Down here we corn the beef first and then spice it. It is lovely with a salad or with pickled red cabbage and potatoes. Try it you won't be dissapointed!:)
